Broadbean Pasta

Thankyou once again to Designs by Gollum for hosting Foodie Friday. This recipe began as my attempt to break Mr Bee's irrational and deep seated hatred of the humble Broad Bean. He claims to have suffered emotional scaring as a result of childhood consumption of this particular vegetable.

This year we have a bumper crop and I have made the most of it and developed our Broad Bean Pasta. Mr Bee has recovered from said bean induced psychological damage and now claims that this is one of his favourite meals.


Broad Bean Pasta

serves 2 adults

250g shelled broad beans
4 rashers bacon
2 tins of tomatoes
garlic - to taste
chilli flakes - to taste
salt and pepper - to taste

125g pasta per person

Shell and boil the beans for approximately 5-10 minutes until they change colour to a deep green. Drain and allow the beans to cool a enough so you can handle them and peel off the outer layer of skin. This is very quick and easy as the beans should just slip out now that the outer layer has been soften by cooking. Chop and fry the bacon. Once the bacon is cooked how you like it add the chilli and garlic, frying fairly swiftly so the garlic does not brown and go bitter. Add the tinned tomatoes, salt and pepper. Toss through your choice of pasta and top with Parmesan cheese.

The bacon in my pasta looks huge but it was the one our butcher smokes and hand carves himself so it is rather thick, not that Mr Bee complains. Next to chocolate and chilli, bacon is one of his favourite foods.......and broad beans of course ;)

  4. Looks delicious, and I think if you put Parmesan on almost anything, it will be eaten!
    I do like the combination of the beans and pasta, though -- nice!

  6. What a good idea.....I think I'll trying adding beans to pasta. I've topped pasta with broccoli before but never beans. Sounds like a yummy recipe!
